Slow Food

Slow Food is a non-profit international organization founded in Italy in 1989 to counteract the disappearance of local food traditions and people’s dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world. Appellation is a proud supporter of “Slow Food” and subscribes to the philosophy of using and producing food that is “good, clean and fair” through the preservation of gastronomic traditions and the promotion of bio-diversity.  Our Executive Chef Mark McNamara has been part of the organising committee for the cultural food event Barossa Slow since 2002, and was a member of the 1000 cooks gathering held as part of Slow Food’s Terra Madre in Turin Italy 2006.
