Slow Food is a non-profit international organization founded in Italy in 1989 to counteract the disappearance of local food traditions and people’s dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world. Appellation is a proud supporter of “Slow Food” and subscribes to the philosophy of using and producing food that is “good, clean and fair” through the preservation of gastronomic traditions and the promotion of bio-diversity.
