Our Chef

Executive Chef Joel Grudnoff leads the produce-led culinary team at The Louise. Joel spent his childhood on a small working farm in the Northern New South Wales hinterland where his family raised sheep and free-range chickens and grew small lots of mostly organic vegetables. Joel grew up with a keen appreciation of nature and the landscape around him and loved learning to cook with his mum ‘just by osmosis’ in the kitchen. At 15 Joel started his chefs apprenticeship at the popular Rae’s at Wategos and from there moved to work in restaurants on Queensland’s Sunshine Coast where the common theme was a focus on seafood, local produce and fresh flavours.

Joel worked in a bunch of premium winery restaurants in Queensland, Victoria and South Australia before arriving at The Louise, where Appellation restaurant sits surround by world-famous vineyards and local artisans and producers. For Joel, The Louise team’s long support for small, family businesses and backyard-plot growers is a throw back to his own days as a kid growing up on the family farm in the New South Wales hinterland. The chance to work in a sustainable way and with carefully produced ingredients available right on the doorstep in the Barossa is the perfect blend for Joel, and the results shine in his menus every day.
